Instructions
 

Preparation

  • Set up a large pot on medium heat and pour in the olive oil. Warm for about a minute.
  • Chop the onion and mince the garlic.

Cooking

  • Add the chopped onion and minced garlic to the pot. Sauté for 3 to 5 minutes until softened and translucent.
  • Stir in the sliced mushrooms and cook for 5 to 7 minutes until golden brown.
  • Pour in the vegetable broth and bring to a gentle boil.
  • Add the pasta and cook according to package instructions, about 7 to 10 minutes until al dente.
  • Lower the heat and stir in the heavy cream and grated Parmesan cheese. Season with salt and pepper to taste.
  • Allow to simmer for another 5 minutes until slightly thickened.
