  • 4 pieces boneless, skinless chicken breasts
  • 8 oz fresh cremini or button mushrooms, sliced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tsp fresh thyme leaves
  • 2 tbsp fresh parsley, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Preparation

  • Begin by gathering all the ingredients to have everything ready.
  • Finely chop the onion and garlic, and slice the mushrooms.

Cooking

  • Heat a generous splash of olive oil in a large skillet over medium-high heat.
  • Season the chicken breasts with salt and pepper, then sear them in the skillet for about 5 to 7 minutes on each side until golden-brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the diced onion and minced garlic. Sauté for 3 to 4 minutes until translucent.
  • Add the sliced mushrooms to the skillet and cook for about 5 minutes until tender.
  • Pour in the chicken broth and heavy cream, stirring well. Bring to a gentle simmer.
  • Allow the sauce to thicken for about 5 to 10 minutes.
  • Sprinkle in fresh thyme and parsley, then return the chicken to the pan, spooning sauce over it.
  • Let simmer on low heat for a few more minutes until the chicken is heated through.

Notes
