Creamy Mushroom Chicken Meatballs

Ingredients
  

For the Meatballs

  • 1 lb Ground chicken Fresh ground chicken preferred
  • 8 oz Fresh mushrooms, chopped Use a mix of mushroom varieties for depth of flavor
  • 1 cup Breadcrumbs Can use whole grain or panko
  • 1 Egg Large egg to bind the meatballs
  • 1/2 cup Parmesan cheese, grated Freshly grated for best flavor
  • 2 cloves Garlic, minced Ensure the garlic is finely minced
  • 1/2 cup Onion, finely chopped Use yellow or white onion
  • 1/4 cup Fresh parsley, chopped For freshness
  • 1 tsp Salt Adjust to taste
  • 1/2 tsp Pepper Black pepper, freshly ground

For the Sauce

  • 2 tbsp Olive oil For sautéing
  • 1 cup Heavy cream For a creamy sauce
  • 1 cup Chicken broth Low sodium recommended
  • 1 tbsp Cornstarch Optional, for thickening
  • 1 tbsp Lemon juice Optional, for brightness

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the ground chicken, chopped mushrooms, breadcrumbs, egg, Parmesan cheese, minced garlic, chopped onion, parsley, salt, and pepper.
  • Mix the ingredients gently until well combined, but do not overwork the mixture.
  • Form the mixture into meatballs about 1 to 1.5 inches in diameter and place them on a baking sheet lined with parchment paper.

Baking the Meatballs

  • Bake the meatballs in the preheated oven for about 20 minutes or until they are cooked through and golden brown.

Making the Sauce

  • While the meatballs are baking, heat olive oil in a large skillet over medium heat.
  • Add the remaining chopped mushrooms and sauté until they are tender and golden, about 5 minutes.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.
  • If you prefer a thicker sauce, mix cornstarch with a little water, then add it to the sauce while stirring continuously to achieve your desired consistency.

Combining

  • Once the meatballs are done baking, add them to the skillet with the creamy mushroom sauce and let them simmer for a few minutes to absorb some of the flavors.
  • Add lemon juice for a touch of brightness before serving.

Notes

For added flavor, use a mix of mushrooms. Serve over pasta, rice, or steamed vegetables. Can also be made into a meatball sub.
