Instructions
 

Preparation

  • Heat a large pot over medium heat and add the ground beef. Cook until browned, about 5 to 7 minutes. Drain excess fat and set aside.
  • In the same pot, melt the butter over medium heat. Add the chopped onion and diced carrots; sauté for 3 to 4 minutes until tender.
  • Add the minced garlic and continue cooking for 1 more minute.
  • Sprinkle the flour over the sautéed vegetables and stir for about 1 minute to thicken.
  • Slowly pour in the broth while whisking to avoid lumps, mixing until smooth.
  • Add diced potatoes, dried parsley, black pepper, and the browned ground beef. Stir to combine.

Cooking

  • Bring the soup to a gentle simmer over medium-low heat and let it simmer for 15 to 20 minutes until the potatoes are tender.
  • Once the potatoes are cooked, stir in the whole milk and heavy cream. Heat gently without boiling to maintain creaminess.
  • Adjust salt and pepper to taste before serving.

Serving

  • Ladle the soup into bowls and garnish with fresh herbs if desired. Serve with crusty bread or warm rolls.
