  • 4 large large potatoes, peeled and diced Russet or Yukon Gold potatoes recommended
  • 1 medium onion, chopped
  • 2 cloves garlic, minced Fresh garlic is suggested for maximum flavor
  • 1 pound Italian sausage, sliced Use high-quality sausage for the best results
  • 4 cups chicken broth
  • 1 cup heavy cream Can substitute with coconut cream or almond milk for a lighter option
  • to taste Salt and pepper Add gradually and taste as you go
  • for garnish Chopped green onions Adds freshness and color to the dish

Preparation

  • Heat a large pot over medium heat and add the sliced Italian sausage. Sauté until browned and cooked through, about 5 to 7 minutes. Remove sausage from the pot, leaving drippings.
  • In the same pot, add chopped onion and minced garlic. Sauté for 3-5 minutes until the onion is translucent and fragrant.
  • Add the diced potatoes and chicken broth to the pot. Stir and bring to a boil. Reduce to a simmer and cook for 15-20 minutes until potatoes are tender.
  • Use an immersion blender to puree the soup if desired, or blend only half for a chunkier texture.
  • Stir in the heavy cream and the cooked sausage, heating through. Season with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with chopped green onions. Serve warm.

Notes

This soup can be made in advance and tastes better the next day. It pairs well with crusty bread or a light salad.
