  • 1 pound Italian sausage Use high-quality Italian sausage for best flavor.
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth Can substitute with vegetable broth for a vegetarian version.
  • 2 cups tortellini (fresh or frozen)
  • 2 cups kale, chopped Adds nutrition and color.
  • 1 cup heavy cream Can reduce for a lighter soup.
  • to taste Salt and pepper
  • as needed Olive oil For sautéing the onion.

Instructions
 

Preparation

  • Gather all your ingredients.
  • Pour olive oil into a large pot and set it over medium heat.
  • Add diced onion and cook until soft and translucent, about 3 to 5 minutes.
  • Add the Italian sausage, breaking it into smaller pieces, and sauté for about 5 to 7 minutes until browned.
  • Stir in the minced garlic and cook for another minute until fragrant.

Cooking

  • Pour in the chicken broth and bring to a gentle simmer for about 10 minutes.
  • Add the tortellini and cook according to the package instructions until tender.
  • Stir in the chopped kale and let it wilt into the soup.
  • Pour in the heavy cream, stir well, and season with salt and pepper to taste.
  • Let it cook for a couple more minutes until heated through.

Serving

  • Ladle the soup into bowls and serve hot.
  • Top with freshly grated Parmesan cheese or a sprinkle of parsley.

Notes

For added spice, you can incorporate crushed red pepper flakes while sautéing. This soup stores well in the refrigerator for up to 3 days or can be frozen for longer storage.
