  • 2 tablespoons butter
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cups vegetable broth
  • 1 cup heavy cream
  • Salt and black pepper to taste

Instructions
 

Sauté the Vegetables:

  • In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften and become fragrant. This step builds the foundation of the soup’s flavor.

Add the Broth:

  • Pour in the vegetable broth and bring the mixture to a gentle simmer. Stir occasionally, letting the flavors meld together. Simmer for about 10 minutes, until the vegetables are fully tender.

Blend Until Smooth:

  • Once the vegetables are soft, use an immersion blender to blend the soup directly in the pot. If you don’t have an immersion blender, carefully transfer the soup in batches to a blender and puree until smooth. This is what gives the soup that creamy, velvety texture.

Stir in the Cream:

  • Return the soup to the pot if you used a blender. Stir in the heavy cream, and let it heat through over low heat for another 5 minutes. Taste and adjust the seasoning with salt and black pepper as needed.

Serve & Enjoy:

  • Once the soup is hot and creamy, it’s ready to serve. Ladle into bowls and garnish with your favorite toppings.
