Creamy Spinach Pasta

An easy and tasty meal that combines pasta with a smooth garlic and Parmesan sauce and fresh spinach, ready in about 30 minutes.

Ingredients
  

  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon mustard powder
  • 1/4 teaspoon garlic powder
  • 4 tablespoons salted butter
  • 3 cloves garlic (minced fresh)
  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth (or vegetable broth for vegetarian)
  • 1 cup half and half
  • 3 teaspoons lemon juice
  • 3/4 cup finely grated Parmesan cheese
  • 1 1/2 cups fresh spinach
  • 1/2 pound ziti rigati (or penne)

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a skillet, melt butter over medium-low heat. Add minced garlic and cook until fragrant and slightly browned.
  • Whisk in flour and cook for about 2 minutes until it darkens slightly.
  • Gradually pour in the chicken broth, whisking constantly to prevent lumps. Then stir in the half and half.
  • Add oregano, parsley, mustard powder, garlic powder, and lemon juice. Stir well and reduce heat to low.
  • Mix in Parmesan cheese until melted, then add spinach and let it wilt in the sauce.
  • Add the drained pasta to the skillet and toss to coat in the sauce. Adjust seasoning as needed.
  • Serve hot, optionally garnished with extra Parmesan and lemon wedges.
