  • 1.5 lbs 4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • 1/2 cup sun-dried tomatoes (oil-packed)
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 12 oz fettuccine pasta or your choice of pasta
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Preparation

  • Gather your ingredients and arrange them within easy reach.
  • Preheat a large skillet over medium heat and add olive oil.
  • Season chicken breasts with salt and pepper. Sear in the skillet for 5-6 minutes on each side until golden brown. Set aside.
  • In the same skillet, sauté garlic and sun-dried tomatoes for 1-2 minutes until fragrant.
  • Add heavy cream and bring to a simmer; then add spinach and cook until wilted.
  • Stir in Parmesan cheese to thicken the sauce.
  • Cook pasta according to package instructions, reserving one cup of the pasta water.
  • Mix the drained pasta into the skillet, adding reserved pasta water until desired consistency is reached.
  • Slice the chicken breasts and layer over the pasta.
  • Serve with extra Parmesan on the side and add a fresh side salad if desired.

Notes

Pat chicken breasts dry before seasoning for better texture. Adjust cream amount for sauce richness. Fresh veggies enhance flavor.
