Sauce Ingredients

  • 2 tablespoons olive oil For sautéing

  • 16 ounces assorted mushrooms, sliced (such as cremini and shiitake) Use a variety for richer flavor
  • 1 cup vegetable broth To deglaze and add moisture
  • 1 cup heavy cream For creaminess
  • 1 cup grated Parmesan cheese For added flavor and creaminess
  • 1 teaspoon dried Italian herbs
  • Salt to taste salt Adjust based on preference
  • Pepper to taste pepper Adjust based on preference
  • Fresh parsley, chopped (for garnish) Adds freshness

Instructions
 

Preparation

  • Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving about half a cup of pasta water for later use.
  • In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 3-4 minutes until soft and translucent.
  • Stir in the minced garlic and cook for an additional 1 minute, being careful not to let it burn.

Cooking

  • Add the sliced mushrooms to the skillet and cook for about 7-8 minutes, or until they have released their moisture and become nicely browned.
  • Pour in the vegetable broth and bring to a gentle simmer, allowing it to bubble for about 2-3 minutes.
  • Lower the heat, then stir in the heavy cream and grated Parmesan cheese. Mix thoroughly until the cheese has melted and the sauce becomes creamy.
  • Season with dried Italian herbs, salt, and pepper to taste. If the sauce seems too thick, add a little reserved pasta water to achieve your preferred consistency.

Assembly

  • Toss the cooked pasta with the creamy sauce until well-coated. Warm through for a minute or two, if necessary.
  • Serve hot, garnished with fresh parsley.

Notes
