Creamy Tuscan Ravioli Soup

Ingredients
  

  • 1 Tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 oz fresh spinach, chopped
  • 1 pint heavy cream
  • 1 cup chicken broth
  • 9 oz cheese ravioli, fresh or frozen
  • 1 tsp Parmesan cheese, grated
  • to taste salt and pepper

Instructions
 

  • Heat olive oil in a large pot over medium heat.
  • Add finely chopped onion and sauté for about 5 minutes until soft and translucent.
  • Add minced garlic and sauté for an additional minute until fragrant.
  • Stir in chopped spinach and cook for 2-3 minutes until wilted.
  • Pour in heavy cream and chicken broth, stirring to combine.
  • Add the cheese ravioli and cook according to package instructions until tender.
  • Stir in grated Parmesan cheese and season with salt and pepper to taste.
  • Serve warm, garnished with extra Parmesan if desired.
