For the cookies

  • 1 cup unsalted butter, softened Make sure it's at room temperature.
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract Using high-quality vanilla can enhance flavor.
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar (for topping) Ensure this is granulated sugar for caramelizing.

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.
  • In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  • Use a cookie scoop or spoon to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Sprinkle a small amount of granulated sugar over the top of each cookie before baking.

Baking

  • Bake the cookies for 10-12 minutes, or until the edges are set but the centers are still soft.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  • To create the signature caramelized sugar topping, use a kitchen torch to carefully melt the sugar on top of each cookie until it bubbles and turns golden brown. Alternatively, you can broil them in the oven for a few minutes—watch closely to avoid burning.
