Ingredients
  

For the Cod Coating

  • ½ cup grated Parmesan cheese Preferably freshly grated for better flavor
  • 1 cup breadcrumbs (preferably panko for added crunch) Panko breadcrumbs provide a crunchier texture
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • to taste Salt and pepper

For the Fish

  • 4 cod fillets You can use any type of white, flaky fish
  • 2 tablespoons olive oil To coat the fish
  • 1 lemon, cut into wedges for serving Adds freshness when serving

Instructions
 

Preparation

  • Preheat your air fryer to 400°F (200°C).
  • In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, dried parsley, salt, and pepper. Mix well.
  • Pat the cod fillets dry with paper towels.
  • Brush each fillet with olive oil.
  • Dredge the cod fillets in the breadcrumb mixture, pressing gently to ensure the coating sticks.

Cooking

  • Arrange the coated fillets in the air fryer basket in a single layer, ensuring they do not touch.
  • Air fry the cod for about 10-12 minutes, or until the coating is golden brown and the fish flakes easily with a fork.
  • Remove the cod from the air fryer and serve immediately with lemon wedges on the side.

Notes

For extra crispiness, consider double-dipping the fillets in oil before coating with breadcrumbs. Store leftovers in the fridge for up to 2 days in an airtight container.
