Main Ingredients

  • 2 medium yellow squashes Fresh and firm
  • 1 cup breadcrumbs (preferably panko) For extra crunch
  • 1/2 cup grated Parmesan cheese Can substitute with other cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 large egg Beaten
  • 1 tablespoon olive oil

Instructions
 

Preparation

  • Wash the yellow squashes. Cut off both ends and slice them into 1/4-inch rounds.
  • In a bowl, mix together the breadcrumbs, Parmesan cheese, garlic powder, onion powder, salt, and black pepper to create the breading.
  • In another bowl, beat the egg and mix in the olive oil to help the breadcrumb coating stick.
  • Dip each slice of squash into the egg mixture, ensuring it’s fully coated, then roll it in the breadcrumb mixture until it is fully covered.

Cooking

  • Preheat your air fryer to 400°F (200°C).
  • Place the breaded squash slices in the air fryer basket in a single layer. You may need to cook them in batches depending on the size of your air fryer.
  • Air fry them for about 10-12 minutes, flipping halfway through, until they are golden brown and crispy.
  • Once done, remove the crispy squash from the air fryer and let them cool slightly before serving.

Notes

Ensure slices are uniform for even cooking. Avoid overcrowding the air fryer basket. Allow to rest after cooking for maximum crispiness.
