Ingredients
  

For the Salmon Bites

  • 1 lb salmon fillet, cut into bite-sized pieces Fresh salmon is recommended for best texture and flavor.
  • 1 cup panko breadcrumbs Panko breadcrumbs create a light and crispy texture.
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1/2 cup mayonnaise
  • 2-3 tablespoons sweet chili sauce
  • 1 tablespoon sriracha Adjust spice level as desired.
  • to taste salt and pepper
  • for frying oil Oil for frying

For Garnish

  • to taste chopped green onions
  • to taste sesame seeds

Instructions
 

Prepare the Sauce

  • In a medium-sized bowl, mix together the mayonnaise, sweet chili sauce, sriracha, salt, and pepper. Stir well until smooth and creamy. Set aside.

Prepare the Salmon

  • Cut the salmon fillet into bite-sized pieces.

Coat the Salmon

  • Set up a breading station with all-purpose flour in one shallow bowl, beaten eggs in another, and panko breadcrumbs in a third. Coat each salmon piece in flour, dip in beaten eggs, and then roll in panko breadcrumbs, pressing to stick.

Fry the Salmon Bites

  • Heat enough oil in a large skillet over medium-high heat. Test if it's hot enough by dropping in a small piece of bread; if it sizzles, you're ready.
  • Fry the salmon bites in batches for 3-4 minutes on each side or until golden brown, adjusting heat as necessary.

Drain and Toss

  • Remove the salmon bites with a slotted spoon and place on paper towels to drain. Toss them in the prepared Bang Bang sauce while warm.

Serve

  • Arrange the bites on a large platter, sprinkle with green onions and sesame seeds, and serve with extra sauce on the side.
