Main Ingredients

  • 1 pound Crispy Chicken Tenders (or crispy tofu/tempeh for a vegetarian option)
  • 2 cups Bell Peppers (various colors) Like red, green, and yellow.
  • 1 medium Red Onion (or green onions for a milder flavor)
  • 1 cup Shredded Cheddar Cheese (or pepper jack for a spicy kick)
  • 1/2 cup Ranch Dressing (homemade or store-bought)
  • 4 large Flour Tortillas (or whole wheat/corn tortillas for a healthier option)
  • 2 tablespoons Olive Oil or Butter Optional for sautéing.

Instructions
 

Preparation

  • If using crispy chicken tenders, make sure they are warm. If using tofu or tempeh, cook according to instructions until crispy and nicely browned.
  • Slice the bell peppers and red onion into thin strips.

Sautéing

  • Heat olive oil or butter in a skillet over medium heat.
  • Once hot, add the sliced onions and bell peppers. Cook for about 5-7 minutes until tender yet still a bit crunchy.

Assembly

  • Lay out your tortillas on a clean surface, layer with crispy chicken (or tofu/tempeh), sautéed vegetables, shredded cheese, and ranch dressing.
  • Fold the sides of the tortilla inwards and roll it tightly from the bottom up to prevent any fillings from spilling out.
  • Place the burritos seam-side down in the skillet and toast on medium heat for about 2-3 minutes on each side until golden brown and crispy.
  • Serve sliced in half with additional ranch for dipping or alongside salad, salsa, or guacamole.

Notes

For a healthier option, consider whole wheat tortillas or adding more veggies. These burritos can be grilled for added flavor.
