  • 1 tablespoon fresh parsley, chopped Optional for garnish.
  • 1/2 teaspoon red pepper flakes Optional for garnish.

Instructions
 

Preparation

  • Heat the olive oil in a non-stick skillet over medium-high heat until it shimmers.
  • Sprinkle the crumbled feta cheese evenly in the hot skillet and cook for about 1 to 2 minutes until it begins to melt and crisp at the edges.
  • Carefully crack the eggs over the melted feta, spacing them apart. Season with salt and black pepper.

Cooking

  • Cook the eggs for approximately 3 to 4 minutes until the egg whites are set and yolks are runny.
  • For firmer yolks, adjust cooking time or cover the skillet with a lid.

Serving

  • Serve immediately while hot, garnishing with chopped parsley and a sprinkle of red pepper flakes.
  • Pair with toasted crusty bread or avocado slices.
