  • 4 cups cooked jasmine or basmati rice Day-old rice is recommended for best texture.
  • 1 lb boneless, skinless chicken breast, cut into small pieces Cut evenly for consistent cooking.
  • 1/4 cup cornstarch Used to coat the chicken for crispiness.
  • 1/4 cup water
  • 4 cloves garlic, minced Fresh garlic enhances flavor.
  • 2 tbsp olive oil or sesame oil Used for frying.
  • 3 tbsp low-sodium soy sauce To taste, add more if desired.
  • 1 tbsp oyster sauce (optional) Adds depth of flavor.
  • to taste ground black pepper
  • 1 cup frozen peas and carrots, thawed A convenient vegetable mix.
  • 1/4 cup sliced green onions For garnish and flavor.
  • 2 large eggs, lightly beaten Adds protein and richness.

Instructions
 

Preparation

  • Combine the cornstarch and water in a large bowl to create a batter. Add the chicken pieces and ensure they are well-coated.
  • Prepare the rice ahead of time. Day-old rice is optimal for less stickiness and better texture.

Cooking

  • Heat oil in a large skillet or wok over medium-high heat. Add chicken in a single layer and cook for 3-4 minutes until golden brown and crispy.
  • Remove chicken and set aside. If necessary, add more oil and sauté minced garlic for about a minute until fragrant.
  • Add cooked rice, gently breaking up any clumps and mixing with garlic.
  • Return crispy chicken to the skillet and add thawed peas and carrots. Pour in soy sauce and optional oyster sauce, stirring until heated through.
  • Push rice mixture to one side of the pan. Pour beaten eggs into the other side, scrambling until fully cooked, then mix into the rice.
  • Cook the mixture for an additional 2-3 minutes to achieve a slightly crispy bottom.
  • Top with sliced green onions and give it a good stir before serving.

Notes
