Crispy Gnocchi with Spinach and Feta

Ingredients
  

  • 1 lb gnocchi
  • 2 Tbsp olive oil
  • 4 cups fresh spinach
  • 4 oz feta cheese, crumbled
  • 2 cloves garlic, minced
  • to taste salt
  • to taste black pepper
  • 1 tsp red pepper flakes (optional)

Instructions
 

  • Boil a large pot of salted water. Add the gnocchi and cook until they float (about 2-3 minutes). Drain and set aside.
  • In a large frying pan, heat olive oil over medium-high heat. Add the drained gnocchi and cook undisturbed for 2-3 minutes until golden brown.
  • Stir the gnocchi and continue cooking for another 2-3 minutes until crispy on all sides.
  • Add minced garlic and sauté for about a minute until fragrant.
  • Add fresh spinach and stir until wilted, about 2-3 minutes.
  • Season with salt, black pepper, and red pepper flakes if using. Stir in crumbled feta cheese, removing from heat.
  • Serve immediately, garnished with additional feta or herbs if desired.
