fresh spinach

feta cheese, crumbled

garlic, minced

black pepper

Instructions
Boil a large pot of salted water. Add the gnocchi and cook until they float (about 2-3 minutes). Drain and set aside.
In a large frying pan, heat olive oil over medium-high heat. Add the drained gnocchi and cook undisturbed for 2-3 minutes until golden brown.
Stir the gnocchi and continue cooking for another 2-3 minutes until crispy on all sides.
Add minced garlic and sauté for about a minute until fragrant.
Add fresh spinach and stir until wilted, about 2-3 minutes.
Season with salt, black pepper, and red pepper flakes if using. Stir in crumbled feta cheese, removing from heat.
Serve immediately, garnished with additional feta or herbs if desired.
