Ingredients
  

For the salmon bites

  • 1 pound fresh salmon fillet, skin removed and cut into bite-size pieces
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 3 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour (or cornstarch for gluten-free)
  • 1/4 cup breadcrumbs (preferably panko for extra crunch)
  • Vegetable oil for frying
  • Chopped green onions for garnish

Preparation

  • Cut the salmon fillet into bite-sized pieces, ensuring they are uniform for even cooking.
  • In a separate bowl, whisk together honey, soy sauce, rice vinegar, minced garlic, grated ginger, black pepper, and salt to create the marinade.
  • Add the salmon pieces to the marinade, covering them well. Let them marinate for at least 30 minutes.

Cooking

  • Remove the salmon pieces from the marinade and let any excess marinade drip off.
  • In another bowl, mix flour and breadcrumbs together. Coat each piece of salmon lightly in the flour mixture, shaking off any excess.
  • Heat vegetable oil in a large skillet over medium-high heat.
  • Carefully add the salmon bites to the pan, ensuring not to overcrowd it. Fry for about 3-4 minutes on each side until they turn golden brown and crispy.
  • Use a slotted spoon to remove the bites and place them on a paper towel-lined plate to absorb excess oil.
  • Drizzle some of the leftover marinade over the fried salmon bites for added flavor, if desired. Garnish with chopped green onions and serve hot.

Notes

Store cooled salmon bites in an airtight container in the refrigerator for up to three days, or freeze for 2-3 months. Reheat in an oven or air fryer for best results.
