  • 10 sheets rice paper
  • 1 cup finely chopped scallions
  • 1/2 cup all-purpose flour

  • 1/2 teaspoon black pepper

Preparation

  • Start by preparing your work surface. Lay out a damp kitchen towel to help keep the rice paper pliable.
  • In a bowl, combine the flour, water, salt, and pepper. Mix until you achieve a smooth batter.
  • Dip each sheet of rice paper in warm water until soft, then place it on the damp kitchen towel.
  • Spread a thin layer of the batter over the rice paper, leaving a small border around the edges.
  • Evenly sprinkle the chopped scallions over the batter, pressing them gently into the mixture.
  • Fold the rice paper in half, enclosing the scallions and creating a semi-circle.

Cooking

  • Heat oil in a pan over medium-high heat. Once hot, carefully place the folded pancake in the pan.
  • Cook for about 3-4 minutes on each side until golden brown and crisp.
  • Remove from the pan and drain any excess oil on paper towels. Serve hot.
