Ingredients
  

Main Ingredients

  • 2 pounds carrots Fresh and vibrant carrots are recommended.
  • 4 tablespoons butter (melted) Use unsalted butter for better control of seasoning.
  • 3 cloves garlic (minced) Can adjust according to taste.
  • 2 tablespoons olive oil Extra virgin olive oil is preferable.
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Freshly ground is best.
  • Fresh herbs (optional for garnish) Parsley or thyme work well.

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • Wash and peel the carrots.
  • Steam the carrots in a steamer basket over simmering water for about 10 minutes until slightly tender.
  • Drain the carrots and let them cool for a few minutes.
  • In a large baking sheet, toss the cooled carrots with olive oil, salt, and black pepper.
  • Use a fork or potato masher to gently smash each carrot to about half an inch thick.
  • In a small bowl, mix the melted butter with minced garlic and drizzle over the smashed carrots.

Cooking

  • Roast the carrots in the preheated oven for 20-25 minutes, flipping halfway through.

Serving

  • Sprinkle fresh herbs over the top before serving.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven to regain crispiness.
