Preparation

  • Preheat your oven to 425°F (220°C).
  • Bring a pot of water to a boil and add the peeled and cut carrots.
  • Cook the carrots for about 10 to 15 minutes until fork-tender.
  • Drain the carrots and let them cool slightly.
  • Prepare a baking sheet lined with parchment paper.

Cooking

  • Place the boiled carrots on the baking sheet and gently smash each carrot down using a fork or the bottom of a glass.
  • Drizzle the melted butter and olive oil over the smashed carrots.
  • Sprinkle minced garlic, salt, and pepper evenly across the carrots.
  • Roast the carrots in the preheated oven for about 20 to 25 minutes until golden-brown and crispy.
  • Allow to cool briefly before garnishing with fresh herbs.
  • Serve warm and enjoy!
