Ingredients
  

Vegetables

  • 2 cups fresh broccoli florets Use small florets for even cooking.
  • 1 cup shredded carrots Freshly shredded.
  • 1/2 cup chopped onion Finely chopped for sweetness.

Soup Base

  • 3 cups vegetable broth Essential for flavor infusion.
  • 1 cup half-and-half Adds creaminess to the soup.

Cheese and Seasoning

  • 2 cups shredded cheddar cheese Quality cheddar for the best flavor.
  • 1 teaspoon garlic powder Enhances the overall flavor.
  • Salt and pepper to taste Salt and pepper Adjust to preference.

Preparation

  • Wash the broccoli thoroughly, then cut it into small florets.
  • Shred the carrots using a grater, and finely chop the onion.

Cooking

  • In your crock pot, add the fresh broccoli florets, shredded carrots, and chopped onion.
  • Pour in the vegetable broth.
  • Cover the crock pot and set it to cook on low for 4-6 hours.
  • Check on the vegetables halfway through, and adjust cooking time as needed.
  • When the vegetables are tender, stir in the half-and-half about 30 minutes before serving.
  • Add the shredded cheddar cheese and garlic powder, stirring until cheese is melted.
  • Season with salt and pepper to taste.
  • Allow the soup to heat through before serving.
