Cream and Cheese

Instructions
 

Preparation

  • Chop the fresh broccoli into bite-sized florets.
  • Dice the onion and mince the garlic.

Cooking

  • In a crock pot, combine the chopped broccoli, onion, and garlic.
  • Pour in the vegetable broth, ensuring the veggies are covered.
  • Add shredded carrots and season with salt and pepper. Stir gently.
  • Cover and set the crock pot to low heat for about 4 to 6 hours.
  • Once cooked, stir in the heavy cream.
  • Gradually add the cheddar cheese, stirring until melted and smooth.
  • Taste and adjust seasoning if needed. If desired, cook an additional 15-30 minutes for a thicker consistency.

Serving

  • Ladle the soup into bowls and garnish with extra cheddar cheese.
  • Serve with crusty bread or rolls.
