  • 1 lb boneless, skinless chicken breasts
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 2 cups pasta (penne or rotini)
  • 1 tablespoon Cajun seasoning
  • to taste Salt and pepper
  • for garnish Fresh parsley

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts at the bottom of your crock pot.
  • Add the chopped onion, bell pepper, and minced garlic on top of the chicken.
  • Pour in the chicken broth and heavy cream.
  • Sprinkle the Cajun seasoning, along with salt and pepper, over the top.
  • Cover the crock pot and set it to cook on low for about 4 to 6 hours.
  • After cooking, use two forks to shred the chicken right in the pot.
  • Meanwhile, bring a pot of salted water to a boil and cook your pasta until it’s al dente.
  • Drain the pasta and stir it into the crock pot mixture with the chicken and sauce.
  • Let it sit for a few minutes to absorb the flavors before serving.
  • Garnish with freshly chopped parsley.
