  • 2 pieces chicken breasts
  • 1 cup pasta (penne or rotini)
  • 1 cup diced bell peppers (any color)
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream Don't skip for a rich texture!
  • Salt and pepper to taste
  • Grated Parmesan cheese (for serving)
  • Fresh parsley (for garnish)

Preparation

  • Layer the chicken breasts at the bottom of your slow cooker.
  • Add diced bell peppers, onions, and minced garlic.
  • Pour the can of diced tomatoes over the vegetables.
  • Add chicken broth to the mixture.
  • Sprinkle Cajun seasoning over the mix and stir gently.
  • Cover the slow cooker and cook on low for 5-6 hours or high for 3-4 hours.

Pasta Preparation

  • Cook the pasta according to package instructions about 20-30 minutes before the chicken is done.
  • Drain the pasta and set aside.

Final Steps

  • Shred the chicken in the slow cooker using two forks.
  • Add heavy cream and mix well to transform the dish into a creamy pasta delight.
  • Stir in the cooked pasta until everything is evenly coated.
  • Serve bowls topped with grated Parmesan cheese and fresh parsley.
