Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the crock pot.
  • Slice the bell pepper and onion into thin strips and layer them over the chicken.
  • Pour the can of diced tomatoes over the chicken and vegetables.
  • Sprinkle the taco seasoning evenly over the mixture.
  • Season with salt and pepper to taste.

Cooking

  • Cover the crock pot and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender.
  • Once done, shred the chicken in the pot using two forks.

Serving

  • Warm the tortillas and fill them with a scoop of the shredded chicken mixture.
