  • 2 pounds boneless, skinless chicken breasts
  • 4 cups chicken broth Use low-sodium for better control of saltiness.
  • 2 cups heavy whipping cream
  • 4 tablespoons butter
  • 2 tablespoons Cajun seasoning Adjust to taste.
  • ½ teaspoon garlic powder
  • 1 pound penne pasta Other pasta types can be used.
  • 1 cup grated Parmesan cheese Add for flavor and creaminess.

Preparation

  • Prepare all ingredients. If adding vegetables like bell peppers or onions, chop them into bite-sized pieces.
  • In a 6-quart crock pot, add the chicken breasts, followed by the heavy cream and chicken broth.
  • Add the butter, Cajun seasoning, and garlic powder, ensuring the mixture is well combined.
  • Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until chicken reaches an internal temperature of 165°F.
  • Once chicken is cooked, shred it directly in the pot using two forks.
  • Stir in the uncooked penne pasta ensuring it is covered by the sauce, then cover and cook on high for an additional 20 to 30 minutes.
  • Once pasta is tender, stir in the grated Parmesan cheese until melted and combined.

Serving

  • Ladle generous portions into bowls or onto plates, garnishing with fresh parsley or additional Parmesan cheese if desired.
  • Serve with garlic bread or a crisp green salad.
