Crock Pot French Onion Chicken

  • 2 pounds boneless skinless chicken breasts, trimmed
  • 1 cup sliced onion
  • 1 ounce onion soup mix
  • 10.5 ounces condensed French onion soup
  • 1/2 cup fried onions To add crunch
  • 2-3 slices Swiss cheese
  • Parsley for garnish

Instructions
 

Preparation

  • Start by lightly spraying the inside of your slow cooker with non-stick spray.
  • Place the trimmed boneless, skinless chicken breasts at the bottom of the slow cooker, spreading them out evenly.
  • Sprinkle the sliced onions over the chicken.
  • Add the onion soup mix on top, followed by pouring the condensed French onion soup all over the layers. Gently mix everything together.

Cooking

  • Cover the slow cooker and set it to cook on HIGH for 3-4 hours or on LOW for 4-6 hours.
  • About 30 minutes before the cooking time is up, sprinkle the fried onions over each chicken breast and place Swiss cheese slices on top.

Serving

  • Once the cheese has melted, sprinkle fresh parsley over the top before serving.
  • Serve over egg noodles or rice.

Notes

For a deeper flavor, consider sautéing the onions before adding them to the slow cooker. You can also experiment with different types of cheese.
