Crock Pot French Onion Chicken

  • 2 pounds boneless skinless chicken breasts, trimmed
  • 1 cup sliced onion
  • 1 ounce onion soup mix
  • 10.5 ounces condensed French onion soup
  • 1/2 cup fried onions
  • 2-3 slices Swiss cheese
  • Fresh parsley for garnish

Instructions
 

Preparation

  • Spray the inside of your slow cooker with non-stick cooking spray.
  • Place the trimmed chicken breasts evenly in the bottom of the slow cooker.
  • Layer the sliced onions over the chicken.
  • Sprinkle the onion soup mix evenly on top of the onions.
  • Pour the condensed French onion soup over the chicken and onions, covering everything well.

Cooking

  • Cover the slow cooker and set it to cook on HIGH for about 3 to 4 hours, or on LOW for 4 to 6 hours.
  • About 30 minutes before cooking is complete, sprinkle the fried onions on top.
  • Place the Swiss cheese slices over the chicken.
  • Cover the slow cooker again to let the cheese melt.

Serving

  • Once cooking time is up, sprinkle fresh parsley over the finished meal.
  • Serve the dish over noodles, rice, or mashed potatoes.
