Peach Filling

  • 4 cups sliced peaches (fresh or canned) Fresh, ripe peaches yield the best flavor.
  • 1/2 cup sugar Divided into the filling and topping.
  • 1/2 tsp cinnamon Enhances the flavor of the peach filling.

Cobbler Topping

  • 1/2 cup butter, melted Forms the base for the cobbler.
  • 1 cup flour Use all-purpose or gluten-free flour.
  • 1 cup milk Low-fat milk can be used.
  • 1 tbsp baking powder Leavening agent for the topping.
  • 1 tsp vanilla extract Adds flavor to the cobbler.
  • 1 pinch salt Balances sweetness.

Preparation

  • Slice fresh peaches, removing pits, and combine them with 1/2 cup sugar and 1/2 tsp cinnamon in a bowl. Toss to coat and set aside.
  • In another bowl, mix together flour, remaining 1/2 cup sugar, baking powder, and a pinch of salt. Add milk and vanilla extract, stirring until smooth.

Cooking

  • Pour melted butter into the bottom of the crock pot. Layer the peach mixture evenly over the butter, then pour the batter on top without mixing.
  • Cover and cook on low for 4 to 5 hours, avoiding lifting the lid frequently.

Serving

  • Check for doneness once the cooking time is up. Serve warm, optionally with ice cream or whipped cream.

Notes

For a crisp topping, add granola before cooking. You can also experiment with adding nuts or different spices to the peach mixture.
