  • 4 cups thinly sliced potatoes Starchy varieties like Russets or Yukon Golds are ideal.
  • 2 cups diced ham Use leftover ham for economical cooking.
  • 1 cup shredded cheddar cheese Grate fresh cheese for better melting.
  • 1 cup heavy cream Provides richness to the dish.
  • 1 cup milk
  • 1/2 cup diced onion Adds flavor to the layers.
  • 2 cloves garlic, minced Enhances the creamy sauce flavor.
  • 1 teaspoon salt Adjust according to taste.
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme Can substitute with fresh thyme.
  • 1 tablespoon butter For greasing the crock pot.

Instructions
 

Preparation

  • Grease the interior of your crock pot with 1 tablespoon of butter.
  • Layer half of the thinly sliced potatoes at the bottom of the crock pot.
  • Sprinkle half of the diced ham over the potatoes, followed by half of the diced onions and half of the shredded cheddar cheese.
  • Repeat the layering with the remaining sliced potatoes, ham, onions, and cheese.
  • In a separate bowl, mix the heavy cream, milk, minced garlic, salt, black pepper, and dried thyme until well-combined.
  • Pour the creamy mixture over the layered ingredients in the crock pot, ensuring even distribution.

Cooking

  • Cover and cook on low for about 6 to 8 hours or until the potatoes are tender and the cheese has melted.
  • Check for doneness before serving.

Serving

  • Serve warm, using a large spoon to scoop out portions with a mix of potatoes, ham, and cheese.
  • Optionally, sprinkle fresh thyme or parsley on top before serving for added color and freshness.

Notes

For storage, refrigerate leftovers in an airtight container for up to 3-4 days. Can also freeze for up to 3 months. Reheat in the microwave or cover with foil and bake at 350°F.
