Ingredients
  

For the Beef and Marinade

  • 2 lbs flank steak (or skirt steak) Choose good quality meat for the best flavor.
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • ½ tsp salt Adjust to taste.
  • ½ tsp freshly ground black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 2 Tbsp olive oil For greasing the crockpot.
  • ¼ cup freshly squeezed orange juice
  • ¼ cup freshly squeezed lime juice
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup soy sauce Use gluten-free alternative if needed.
  • 2 Tbsp white vinegar

Optional Toppings

  • tortillas (corn or flour) For serving.
  • pico de gallo For serving.
  • avocado slices For serving.
  • Cotija cheese or crumbled feta For serving.

Instructions
 

Preparation

  • In a small bowl, whisk together the smoked paprika, ground cumin, chili powder, salt, black pepper, onion powder, garlic powder, and oregano.
  • Rub half of the spice mixture onto one side of the flank steak, then flip and coat the other side with the remaining spice mix.
  • Mix together the orange juice, lime juice, lemon juice, soy sauce, and white vinegar in another bowl.
  • Lightly grease the crockpot with olive oil and pour half of the marinade into the bottom.
  • Lay the seasoned flank steak in the crockpot and pour the rest of the marinade over the top.

Cooking

  • Cover the crockpot and cook on low heat for about 6 hours, checking for tenderness toward the end.
  • Once done, remove the steak and allow to rest for 5 to 10 minutes, then slice against the grain into thin strips.
  • Return the sliced steak to the crockpot and mix with the cooking juices.

Serving

  • Gently heat the tortillas and set up a serving station with warm tortillas, sliced beef, and toppings.

Notes
