  • 3 to 4 pounds beef short ribs
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 4 cloves garlic, minced
  • 1 large onion, chopped
  • 2 cups beef broth
  • ½ cup soy sauce
  • ¼ cup honey
  • 1 teaspoon dried thyme
  • 2 pieces bay leaves

Preparation

  • Season the beef short ribs generously with salt and black pepper.
  • Seare the ribs on all sides in a skillet with a bit of oil over medium-high heat until browned.
  • Transfer the seared ribs to the crockpot.
  • In a separate bowl, mix the minced garlic, chopped onion, beef broth, soy sauce, honey, dried thyme, and bay leaves.

Cooking

  • Pour the mixture over the seared ribs in the crockpot, ensuring they are well-coated.
  • Cover and cook on low for 6 to 8 hours, until the meat is tender and falls off the bone.

Serving

  • Remove bay leaves and serve the short ribs hot, drizzled with some broth.
  • Pair with mashed potatoes, rice, or roasted vegetables.

Notes
