Crockpot Cheese Tortellini and Sausage

A comforting and creamy dish made with flavorful Italian sausage, tender cheese tortellini, and fresh spinach, all cooked in a slow cooker.

Ingredients
  

  • 1 lb Italian sausage (mild or spicy)
  • 1 package 19 oz frozen cheese tortellini
  • 4 cups fresh spinach, chopped
  • 1 can 28 oz diced tomatoes (undrained)
  • 1 block 8 oz cream cheese, cubed
  • 4 cups chicken broth
  • 1 tsp minced garlic
  • 1 tsp Italian seasoning
  • to taste salt and pepper

Instructions
 

  • In a skillet, brown the Italian sausage over medium heat for about 7-10 minutes. Drain excess fat and transfer to the crockpot.
  • Add diced tomatoes (with juice), minced garlic, Italian seasoning, and salt and pepper to the crockpot. Stir to combine.
  • Pour in the chicken broth and place the cubed cream cheese on top without stirring.
  • Cover and cook on low for 4-5 hours or high for 2-3 hours.
  • In the last 30 minutes, add the frozen tortellini and chopped spinach to the crockpot, stirring gently.
  • Before serving, taste and adjust seasoning as needed. Serve warm.
