Ingredients
  

For the Marinade

  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1/2 teaspoon black pepper
  • 2 teaspoons kosher salt
  • 2/3 cup orange juice
  • 2 limes limes (1 juiced, 1 for serving)

Main Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 3 pieces red bell peppers, cut into 1/2-inch slices
  • 1 large red onion, cut into 1/2-inch slices
  • freshly chopped cilantro for garnish
  • tortillas for serving
  • sour cream for serving
  • guacamole for serving

Instructions
 

Preparation

  • In a small bowl, whisk together the olive oil, chili powder, garlic powder, onion powder, smoked paprika, cumin, black pepper, kosher salt, lime juice, and lime zest to create the marinade.
  • Place the chicken breasts in a large resealable bag and pour the marinade over the chicken, ensuring it is evenly coated. Refrigerate for at least 1 hour, preferably overnight.
  • Slice the onions and bell peppers into 1/2-inch thick pieces.

Cooking

  • Place the marinated chicken in a 6-quart crockpot. Pour the orange juice over the chicken.
  • Layer the sliced onions and bell peppers on top of the chicken.
  • Cover the crockpot and set it to cook on HIGH for 4 to 5 hours, or until the chicken reaches an internal temperature of 165°F.
  • Once cooked, carefully remove the chicken from the crockpot and allow it to rest.
  • After resting, slice the chicken into strips and squeeze lime juice over the top.

Serving

  • Warm the tortillas, then lay them on a platter for serving.
  • Place sliced chicken and cooked vegetables in bowls or on the serving platter for guests to customize their fajitas.
  • Offer toppings such as freshly chopped cilantro, sour cream, guacamole, and lime wedges.

Notes
