  • 2 lbs chicken breasts Use fresh, organic chicken if possible.
  • 1 can (14.5 oz) fire-roasted tomatoes Adds a smoky flavor to the dish.
  • 1 each red bell pepper, sliced
  • 1 each green bell pepper, sliced
  • 1 each red onion, sliced
  • 2 tablespoons fajita seasoning Customize the amount according to spice preference.
  • to taste Salt and pepper Adjust according to personal taste.
  • for serving Tortillas Flour or corn tortillas can be used.

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the crockpot, spreading them out evenly.
  • Pour the can of fire-roasted tomatoes over the chicken.
  • Add the sliced red and green bell peppers and red onion on top of the tomatoes.
  • Sprinkle the fajita seasoning over the top, then add salt and pepper to taste.
  • Stir gently to combine all ingredients.

Cooking

  • Cover the crockpot and select your preferred cooking setting (high for 3-4 hours or low for 6-8 hours).
  • Once cooked, shred the chicken directly in the pot using two forks.
  • Stir everything together to mix the chicken, vegetables, and sauce.

Serving

  • Serve the fajita mixture in warm tortillas. Set up a toppings bar for customization.
