Ingredients
  

Main Ingredients

  • 2 cups cooked rice Day-old rice works best.
  • 1 pound chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, corn) Use fresh or frozen.
  • 3 tablespoons soy sauce You can substitute with coconut aminos.
  • 2 tablespoons sesame oil
  • 2 pieces green onions, sliced For garnish.
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced

Instructions
 

Preparation

  • Place the diced chicken breast at the bottom of your crockpot.
  • Add the cooked rice and mixed vegetables into the crockpot.
  • In a separate bowl, mix the soy sauce, sesame oil, minced garlic, and minced ginger. Whisk well to create a marinade.
  • Pour the soy sauce mixture over the chicken, rice, and vegetables and gently stir to coat everything.

Cooking

  • Cover the crockpot with its lid and set it to cook on low for 4 to 5 hours.

Serving

  • When the cooking time is up, stir in the sliced green onions.
  • Serve warm and enjoy the comforting flavors.
