Ingredients
  

Chicken and Broth

  • 2 pieces chicken breasts Boneless, skinless preferred for tenderness
  • 1 can diced tomatoes (14.5 ounces) Juice included
  • 4 cups chicken broth
  • 1 cup heavy cream Can substitute with half-and-half or non-dairy creamer

Flavor Base

  • 1 cup grated Parmesan cheese For creaminess and flavor
  • 1 piece onion, diced Aromatic base
  • 2 cloves garlic, minced Aromatic base
  • 1 teaspoon Italian seasoning Herb blend for flavor
  • Salt and pepper to taste

Garnish

  • Fresh basil For garnish

Instructions
 

Preparation

  • Place chicken breasts at the bottom of the crockpot.
  • Pour in the can of diced tomatoes with juice.
  • Add the chicken broth to create a savory base.
  • Add the diced onion and minced garlic.
  • Sprinkle in Italian seasoning and add salt and pepper to taste.

Cooking

  • Cook on high for 3 to 4 hours or low for 6 to 8 hours.
  • Shred the cooked chicken using two forks.
  • Stir in the heavy cream and grated Parmesan cheese.
  • Cook on low for an additional 30 minutes.

Serving

  • Ladle the soup into bowls and garnish with fresh basil.
