Ingredients

  • 4 pieces boneless, skinless chicken breasts Use fresh or thawed chicken.
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice Freshly squeezed for best flavor.
  • 3 cloves garlic, minced
  • 1/4 cup capers, drained Can substitute with green olives.
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped For garnish.
  • Lemon slices For garnish.

Instructions
 

Preparation

  • Place the chicken breasts in the bottom of the crockpot.
  • In a bowl, whisk together the chicken broth, lemon juice, minced garlic, capers, oregano, and thyme.
  • Pour the mixture over the chicken breasts, ensuring they are well coated.
  • Season with salt and pepper to taste.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours, until the chicken is tender and cooked through.
  • Once done, remove the chicken breasts and set them aside, keeping them warm.
  • Pour the cooking liquid into a saucepan and bring it to a boil over medium heat.
  • Let it simmer for about 5 to 10 minutes, or until it reduces slightly to enhance the flavors.
  • Return the chicken to the crockpot and cover it to keep warm until serving.
  • Before serving, drizzle the reduced sauce over the chicken and garnish with fresh parsley and lemon slices.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Freeze for up to 3 months. Reheat with added chicken broth if the sauce thickens.
