Ingredients
  

  • 2 breasts chicken breasts boneless and skinless
  • 2 medium carrots diced
  • 2 sticks celery diced
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 6 cups chicken broth
  • 1 can diced tomatoes
  • 2 leaves bay leaves
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp thyme
  • 1/4 cup parsley chopped

Instructions
 

  • Place the chicken breasts, carrots, celery, onion, and garlic into the crockpot.
  • Pour in the chicken broth and diced tomatoes, then add the bay leaves, salt, pepper, and thyme. Stir to combine.
  • Cover and cook on low for 4 hours or until the chicken is fully cooked and tender.
  • Remove the chicken breasts, shred them using two forks, and return the chicken to the soup. Stir in parsley.
  • Serve hot and enjoy!

Notes

This soup is great with a slice of crusty bread or crackers. You can also add other vegetables like potatoes or green beans for more variety.
