Preparation

  • Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  • Add the wild rice on top of the chicken.
  • Chop the onion, carrots, and celery, and add them to the crockpot.
  • Pour in the chicken broth, ensuring everything is submerged.
  • Season the mixture with salt and pepper. Add optional fresh herbs if desired.
  • Cover the crockpot and set it to cook on low for 6-7 hours or on high for 3-4 hours.
  • About 30 minutes before serving, shred the chicken.
  • Return the shredded chicken to the soup and stir in the milk or cream.
  • Let everything warm through before serving.
