Ingredients
  

  • 1 lb ground beef
  • tsp salt
  • ¼ tsp black pepper
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 2 Tbsp chili powder
  • 1 Tbsp cumin
  • ½ tsp ground chipotle
  • ½ tsp cayenne pepper
  • 1 Tbsp Worcestershire sauce
  • 1 Tbsp liquid smoke
  • 14 oz kidney beans, drained and rinsed
  • 28 oz diced tomatoes, undrained
  • 15 oz tomato sauce

Instructions
 

  • Brown the ground beef in a large skillet over medium heat, seasoning with salt and pepper.
  • Add diced green bell pepper, yellow onion, and minced garlic to the skillet. Cook until softened, about 5 minutes.
  • Drain any excess fat from the skillet, then transfer the mixture to the crockpot.
  • Add chili powder, cumin, ground chipotle, cayenne pepper, Worcestershire sauce, and liquid smoke to the crockpot.
  • Stir in kidney beans, diced tomatoes, and tomato sauce, mixing well.
  • Cover and cook on low for 8-10 hours or high for 4-5 hours.
  • Stir before serving and adjust seasonings as needed.
