Ingredients
  

Main Ingredients

  • 1 lb ground beef (or ground turkey) Use lean ground beef for a healthier option.
  • 3-4 medium potatoes, sliced ¼ inch thick Russet or Yukon Gold potatoes work well.
  • 1 can (15 oz) kidney beans, drained Can substitute with black beans or pinto beans.
  • 2 cans (15 oz each) diced tomatoes Use diced tomatoes with green chilies for added flavor.
  • 1 green bell pepper diced Can use other bell peppers as well.
  • 1 cup frozen corn Thawed before adding to the crockpot.
  • 1 onion diced Yellow or white onion recommended.
  • 3 cloves garlic, minced Fresh garlic gives the best flavor.
  • ½ cup beef stock (or chicken stock) Homemade stock is preferred.
  • ½ cup shredded cheddar cheese Add more cheese to taste.

Seasonings

  • ½ teaspoon Italian seasoning
  • ½ teaspoon paprika
  • ¼ teaspoon chili powder Optional for heat.
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt

Instructions
 

Preparation

  • Peel and dice the onion, mince the garlic, slice the potatoes into ¼-inch rounds, and dice the green bell pepper.
  • Heat a skillet over medium heat, add the ground beef to the pan, and cook for about 5 to 7 minutes until browned, draining excess grease if necessary.
  • Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent and aromatic.

Cooking

  • Transfer the beef mixture into the slow cooker and layer in the sliced potatoes, diced tomatoes, diced green bell pepper, frozen corn, and beef stock.
  • Mix in the Italian seasoning, paprika, chili powder, black pepper, and salt.
  • Cover the slow cooker and set it on HIGH for 3 to 4 hours or LOW for 6 to 8 hours.
  • Add the drained kidney beans and sprinkle shredded cheddar cheese on top about 10 to 15 minutes before serving.
  • Cover again until the cheese is melted.

Notes
