Main Ingredients

  • 1 pound ground beef Opt for lean ground beef for a healthier option.
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes Include juices for added flavor.
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 4 cups beef broth Can be substituted with vegetable broth for a vegetarian version.

Spices

  • 2 teaspoons chili powder Adjust to taste for more spice.
  • 1 teaspoon garlic powder
  • to taste salt and pepper Adjust according to preference.

Preparation

  • Brown the Beef: Heat a skillet over medium heat. Add ground beef and cook until fully browned, about 6-8 minutes. Drain any excess fat.
  • Transfer to Slow Cooker: Using a slotted spoon, transfer the browned beef into the slow cooker.
  • Add the Ingredients: Add drained black beans, kidney beans, corn, diced tomatoes, chopped onion, and bell pepper to the slow cooker.
  • Mix in the Broth and Spices: Pour in beef broth and add chili powder, garlic powder, salt, and pepper. Stir well.
  • Cook the Soup: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  • Final Stir Before Serving: Once cooking time is complete, stir the soup well before serving.

Notes

Garnish servings with cilantro or shredded cheese. Serve with warm cornbread or crusty bread. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
