Ingredients
  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken breasts Place at the bottom of the crockpot.
  • 1 can black beans Drained and rinsed.
  • 1 can corn Drained.
  • 1 can diced tomatoes with green chilies
  • 1 packet taco seasoning Generously sprinkle over ingredients.
  • 1 cup chicken broth
  • 1 cup cream cheese Add 30 minutes before serving.
  • 1 cup shredded cheddar cheese Add just before serving.
  • Salt and pepper To taste.
  • Chopped cilantro For garnish.

Preparation

  • Place the boneless, skinless chicken breasts at the bottom of your crockpot.
  • Layer black beans, corn, and diced tomatoes with green chilies over the chicken.
  • Sprinkle taco seasoning over the layered ingredients.
  • Pour in the chicken broth.

Cooking

  • Cover the crockpot and cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • 30 minutes before serving, shred the chicken in the pot.
  • Add cream cheese and stir until melted into the soup.
  • Finally, add the shredded cheddar cheese and season with salt and pepper.

Serving

  • Ladle the soup into bowls, topping with chopped cilantro and any additional toppings like avocado or lime.
