Ingredients
  

Main Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs Chicken can be used interchangeably based on preference.
  • 4 oz cream cheese Should be softened for easy mixing.
  • 8 oz salsa Choose mild, medium, or hot depending on spice tolerance.
  • 1 cup frozen corn Adds sweetness and lovely texture.
  • 1 can black beans Must be drained and rinsed.
  • 1 packet taco seasoning Brings bold flavors to the dish.

Instructions
 

Preparation

  • Rinse the black beans under cold water to remove excess sodium and canned flavor. Make sure to drain them well.
  • Place the boneless chicken breasts or thighs at the bottom of the slow cooker.
  • Cut the cream cheese into slices and distribute evenly over the chicken.
  • Pour the salsa over the chicken and cream cheese.
  • Add the frozen corn on top of the salsa mixture.
  • Sprinkle the drained black beans into the slow cooker.
  • Sprinkle the taco seasoning on top of all ingredients.
  • Gently mix everything together with a large spoon.

Cooking

  • Cover the slow cooker and set it to cook on low for 4 hours or high for 2 hours.
  • Once cooking is complete, shred the chicken using two forks right in the slow cooker.
  • Mix everything together before serving and enjoy.
