Main Ingredients

  • 4 pieces boneless, skinless chicken breasts Place at the bottom of the crockpot.
  • 1 can black beans Drained and rinsed.
  • 1 can corn Drained.
  • 1 cup salsa Use fresh or high-quality store-bought.
  • 1 packet taco seasoning Sprinkle over chicken.
  • 1 cup cream cheese Add 30 minutes before serving.
  • 1 cup shredded cheese Cheddar or Mexican blend; add before serving.

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts at the bottom of your crockpot.
  • Sprinkle the taco seasoning evenly over the chicken.
  • Add the drained and rinsed black beans and drained corn.
  • Pour salsa over the top.
  • Cover the crockpot and set to cook on low for 6-8 hours or high for 3-4 hours.
  • About 30 minutes before serving, add cream cheese and stir to blend.
  • Just before serving, top with shredded cheese and let it melt.

Serving Suggestions

  • Serve over rice, in taco shells, as a burrito bowl, or on a salad.
  • Add optional toppings like cilantro, avocado, or pico de gallo.
