Ingredients
  

For the Beef

  • 2 lbs beef chuck roast Choose a good-quality cut for the best flavor.
  • 1 packet onion soup mix This adds depth of flavor.
  • 1 can beef broth Approximately 15 oz.
  • 1 cup water To combine with the broth.
  • to taste salt and pepper For seasoning the roast.

For the Sandwiches

  • 6 soft hoagie rolls Prepare to fill with beef and cheese.
  • 6 slices provolone cheese For topping the sandwiches.

Optional Garnishes

  • to taste horseradish sauce For serving, if desired.

Preparation

  • Place the beef chuck roast into the crockpot and season generously with salt and pepper.
  • Sprinkle the onion soup mix over the roast.
  • Pour the beef broth over the roast and then add the cup of water.
  • Cover and set the crockpot to cook on low for 8 hours or on high for 4 hours.

Assembly

  • After cooking, shred the beef using two forks.
  • Return the shredded beef to the crockpot and stir to combine with the juices.
  • Prepare the hoagie rolls by cutting them open or lightly toasting.
  • Fill each roll with shredded beef and top with a slice of provolone cheese.
  • Serve with the au jus on the side for dipping.
